Meal Plan for Your Motorhome
You've just purchased your first full size motorhome and
the vacation is planned. As your stocking the pantry and
fridge you start thinking what meals to make and how are you
going to cook them. Yes, you will need be more efficient and
may need to do a little more prep on certain meals because
the kitchenette is smaller than the kitchen in your home.
But don't worry it can be done. The motorhomes now are
equipped with everything you will need oven, stove top, and
microwaves. Here we will give you a recipe for each one to
make a complete meal down to the dessert.
The first recipe we have is a delicious South of the border meat loaf which we found in Pampered Chef's Fall/Winter 2009 Season's Best Recipe Collection. The meat loaf can be cooked in the microwave but for now we're going to bake it in the oven.
South-Of-The-Border Meat Loaf
1 cup finely chopped poblano or green bell pepper
1 medium onion finely chopped
1/2 cup very finely crushed authentic restaurant style tortilla chips
1 cup ketchup
2 tbsp. chipotle rub
1 1/2 lbs. 85% ground beef
1 1/2 cups shredded sharp cheddar cheese (divided)
Chopped fresh cilantro (optional)
Finely chop the pepper and onion. Place tortilla chip in a large resalable plastic bag and crush them to measure 1/2 cup of crumbs. Combine ketchup and rub in bowl and mix. In separate bowl combine pepper, onion, tortilla chip crumbs, 3/4 cup of ketchup, beef, egg and 1 cup of the cheese and mix well.
Place meat into an 8 1/2 x 4 1/2 inch loaf pan and bake uncovered at 40 degrees for 65-70 minutes. Brush on the sauce 15 minutes before the end of bake time.
Sprinkle remaining cheese over meat loaf; cover and let stand for 10 minutes before slicing. Sprinkle cilantro over meat loaf, if desired.
Now if you do want to cook it in the microwave place the meat in a microwave safe dish cover and cook on high for 14-17 minutes. Brush on sauce and cover and cook for an additional 3-5 minutes until the internal temperature reaches 160 degrees.
The second recipe will need a little more prep before everything else. For the stove top we found skillet basil potatoes. The potatoes need to be sliced and cooked earlier, this can even be done a few days earlier and placed in the fridge until you are ready to use them. While the meat loaf is baking you can start the prep for the potatoes but the actual cooking time is about 15 minutes so I wouldn't cook them right away. We found this recipe in Campbell's No time to cook.
Skillet Basil Potatoes
1 tbsp. margarine or butter
1 small onion chopped (about 1/4 cup)
1/2 tsp dried basil leaves crushed
1 can Campbell's condensed Cream of Celery Soup
1/2 cup shredded cheddar cheese
1/4 cup water
4 medium potatoes cooked and sliced (about 4 cups)
Fresh basil leaves and cherry tomato wedges for garnish if desired
Over medium heat, in hot margarine, cook onion and dried basil until onion is tender, stirring occasionally. Stir in soup, cheddar cheese and water. Reduce heat to low. Heat until cheese is melted, stirring often. Add cooked potatoes heat through, stirring occasionally. Cook time is about 15 minutes. Garnish with fresh basil and tomato, if desired.
For a vegetable you can have whatever you and your family likes.
The third and best recipe (of course it is always the best because it is dessert). This recipe is simple and doesn't take much time to prepare or cook but it is extremely delicious. We’re sure you can guess how we are going to cook this one, we have already used the oven and stove top so that only leaves the microwave. The microwave rocky road brownie dessert was found on a Pampered Chef insert card and if you like rocky road you will love this recipe. You can make this dessert earlier if you would like, but it really is much better served warm. Since it doesn't take much time to make, it could be done after everyone has finished dinner.
Microwave Rocky Road Brownie Dessert
1 cup walnut halves, toasted
3/4 cup all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 cup butter
4 oz. unsweetened chocolate
1 1/2 cups sugar
16 large marshmallows
20 milk chocolate kisses, unwrapped
Vanilla ice cream (optional)
Coarsely chop walnuts and to toast them place in a microwave safe bowl uncovered and cook on high for 3-5 minutes stirring every 30 seconds. Combine flour, baking powder, and salt in a separate bowl and set aside. Cut butter into pieces and chop unsweetened chocolate; place butter and chocolate into bowl and microwave uncovered on high for 1-2 minutes or until mostly melted, stirring every 30 seconds. Add sugar and eggs to chocolate mixture; whisk until smooth. Fold in flour mixture and 1/2 cup of the walnuts until incorporated. Pour batter into a microwave safe baker, spread evenly. Microwave, uncovered for high for 5-7 minutes or until toothpick inserted in center comes out clean and the edges are firm.
Meanwhile, snip marshmallows in half crosswise. Top brownie with marshmallows, chocolate kisses, and remaining 1/2 cup of walnuts. Microwave, covered, on high 1-2 minutes or just until marshmallows start to soften. Remove baker from microwave and let stand covered for 5
minutes. Spoon onto plates and serve with vanilla ice cream, if desired.
