On The Lighter Side: Quinoa Tabouleh


Take a break from all the heavy foods from the holidays! Try this quinoa tabouleh--it's a perfect light and refreshing side dish to chicken!

What you’ll need: 

1 cup quinoa

2 cups water

½ cup olive oil

2 bunches parsley, chopped

1 large tomato, diced

1 tsp garlic, chopped

¼ cup lemon juice

Zest of 1 lemon


Cook your quinoa by bringing the water to a boil and adding the grain. There should be no water left over. Immediately add the garlic and the olive oil and stir. Allow the quinoa to cool for about 30 minutes. Add the remaining ingredients and serve!
