Corn and Black Bean Salad


We all have corn and beans in our pantries (and probably some tomatoes!) so why not use what you already have? Give this salsa a try! 


1 can corn, drained

1 can black beans, drained and rinsed

1 small can diced tomatoes, drained

1 can green chilis

1 tbsp chili powder

2 tbsp lime juice

¼ cup finely chopped onion (red or white)

1 tsp minced garlic (½ tsp garlic powder will work too)

Salt to taste



Combine all ingredients in a bowl. Salt to taste. Adding some Tabasco sauce will make it spicier without too much extra liquid--or, you could use different types of peppers! Cilantro is also an excellent add on. 


This salsa is good on chips, tacos and nachos. It’s also great in a burrito or sprinkled on top of a salad!
