Pot pies are a good soul-warming dish—just about everyone loves a good chicken, beef or vegetable pot pie on a chilly day. And pizza? I don’t know a single person who doesn’t love a good pizza! Now, what about combining them? Pizza pot pie is about to become your family’s new favorite chilly day meal! (or let’s face it—any time meal!)
Pizza Pot Pie
Yield: 6-8 servings
1-2 jars pizza sauce
1 lb Italian sausage
1 package sliced pepperoni
2 bags shredded mozzarella
8oz sliced button mushrooms
½ green bell pepper, diced
½ medium onion, diced
1 medium pre-cooked pizza crust
Medium, deep cast iron skillet
Heat your skillet over the fire on the grilling grate. Cook the sausage in the pan and add the onions, peppers and mushrooms. Allow to cook for a few minutes then add half the pepperoni. Pour enough sauce to ensure a good thick yet saucy consistency and mix to combine. Allow to bubble.
Sprinkle one of the bags of cheese on top, mix in and then place the pizza crust on top. Sprinkle with more cheese and cover with foil for a few minutes to allow the top cheese to melt. Carefully remove from heat and cut into pizza slices and use the spoon to serve. Enjoy!
Tip: You can use whatever pizza toppings you want! Bacon, red onion, spinach, ham—the possibilities are endless! If you are choosing to make this in you RV, use pizza dough (Pillsbury sells a wonderful dough for this) and roll it out to fit over the skillet. Cover with the cheese and top with some more pepperoni and bake in a 375F oven until the crust is cooked. The bottom will be a little doughy from cooking in the sauce.
